
Chai is the most popular drink in India, no matter if rich or poor. This recipe comes from my neighbor in Gujarat and I use it for my family and friends. I love the taste of ginger, cinnamon, and cloves.

Ingredients list
- ¾ tbsp black peppercorns
- 16 green cardamom seeds
- 16 whole cloves
- 4 tsp ground ginger
- 4 cinnamon sticks (each about 2 ½ cm), roughly broken
Instructions
Crush all ingredients except the ginger in a mortar. If you want it to go faster, you can use a spice mill.

Sift the powder into a bowl and mix well with the ground ginger.

Transfer to an airtight container or a screw-top jar.

Tips
- The spice blends should be stored in a dark place to preserve the essential oils.
